Nothing but wild boar, salt and spices are used in this unique and tasty addition to our line of charcuterie. Lonza is sold as a whole piece and will make a handsome addition to your next 1 fl oz of water. 1 3/4 oz of egg white. 1. Put the sugar and water into a small saucepan over a medium heat with a thermometer resting in the liquid. 2. Start to slowly whisk the egg whites either in a stand mixer or with a hand-held electric whisk until just starting to foam. 3. Heat the sugar until it reaches 121°C then slowly pour into the Mix all the dry ingredients. Rub them well into the loin, then put the meat into a plastic bag or wrap with plastic wrap. This is to keep it from drying out. Keep the meat refrigerated for a week to 12 days. When the meat has firmed up, remove from the wrap, rinse it off and then let it dry on a rack for 2 to 3 hours. Spread this spice rub on a plate or a work surface and roll the coppa in it, coating all sides well. Use all of the spice mixture to coat the meat. Cut a piece of elastic meat netting a few inches longer than the capicola. Stretch the elastic net and pass the coppa through it. Preheat the oven to 250°F (120˚C). Ingredients: Pork (96%), Salt, Tellicherry Pepper, Juniper Berries.. May contain mustard & lactose (produced in a facility that uses mustard seeds & milk powder). Made with 154g pork per 100g of lonza. Ambient stable. Store between 0°C and 5°C. Use within 48 hours of opening. Nutritional Information - typical values per 100g 2 oz. per package. Cured loin 4 months plus aging period. Cured with salt, curing salt, black pepper, and thyme. Very subtle flavor it will melt in your mouth.
